Nodland Cellars' 2008 Bebop, a remarkable dry Riesling which pairs nicely with chips and my homemade Ole Guacamole. Bebop is an uptempo white with racy citrus with floral tones which is completely captivating.
2-3 ripe avocados halved and pitted
4 teaspoons lemon juice
1 large ripe plum tomato, seeded and chopped
2 T chopped onion (sweet)
Salt and freshly ground pepper to taste
Tabasco or hot pepper sauce to taste
1. Scoop avocados into a bowl, add lemon and mash.
2. With a fork gently mix tomato, onion, salt and pepper, and Tabasco. Serve fresh.
